Keto Cauliflower Casserole Ingredients:

  • 10 ounces of riced frozen cauliflower
  • 1/3 cup of pesto
  • 3/4 cup of sour cream
  • 2 tablespoons of grass-fed butter
  • 1 cup of shredded cheese
  • 6 pieces of bacon, cooked and cut up
  • 1/8 teaspoon of pink salt

Cauliflower Casserole Recipe Directions:

1. Preheat over to 425 degrees.

2. Cook frozen riced cauliflower and try to pat dry on paper towels.

3. Mix in casserole dish, cauliflower rice, small pieces of bacon, pink salt, sour cream, butter, pesto and 1/2 cup of shredded cheese. Cover dish with the other 1/2 cup of shredded cheese.

4. Cook in the oven for 10-15 minutes so the cheese gets crispy on top.

5. Let sit for 5-10 minutes prior to serving.
